vegancooking: "peanut butter Kandy Kakes
OK, as was requested, here is the recipe my great aunt Alberta sent me for Kandy Kakes. a brief background for those of you who are not familiar with these wondrous pastries: they're from Tasty Kakes, a line of snack cakes and similar items, originating in Pennsylvania, i believe (which is where the great aunt lives). i have memories of brown packages filled with boxes of Kandy Kakes and Butterscotch Krumpets being sent to our family each autumn...yum.
i tried to make these vegan last night and my family says that they are 'simply delicious.' i haven't had one yet because i was really full and had just brushed my teeth but that's beside the point, and the point is, this is the recipe:
2 cups of flour (i used whole wheat pastry flour; it was all we had on hand)
2 cups of sugar (since i halved the recipe, i used 3/4 of a cup of evaporated cane juice crystals, since 1 cup seemed insanely sweet to me
1 cup of peanut butter
1 cup of milk (i used soy milk)
1 8 oz hershey bar (semisweet chocolate chips worked out well)
4 eggs (ener-G egg replacer did the job)
2 teaspoons of baking powder
1 teaspoon of vanilla
a pinch of salt
preheat the oven to 350, beat the 'eggs' with the sugar and the vanilla, then add the milk. add the dry ingredients, and"
